Wood-fired pizza starts with more than a flame. Burning wood heats the oven floor and surrounding walls, turning the whole oven into a source of intense heat.

Once a pizza goes in, the hot floor cooks the base while heat from above bakes the crust and toppings. The dough rises, the cheese bubbles, and the edges begin to develop those distinctive spots of char.
